Spiced Pecan Butter Cookies

Spiced Pecans

(Makes 1 cup)

1 & ½ teaspoons tupelo honey

¼ teaspoon cayenne pepper

¼ teaspoon sea salt

1 & ½ teaspoons unsalted butter

1 cup chopped pecans


In a bowl mix the honey, cayenne, and salt. Melt the butter in a skillet over medium heat. Add the honey mixture and the pecans and cook for 8 to 10 minutes, until lightly browned and caramelized. Remove from the heat, cool, and store in an airtight container.


For the cookies

(Makes 4 dozen cookies)

1 & ¼ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup (1 stick unsalted butter), softened

½ cup granulated sugar

¼ cup firmly packed light brown sugar

1 egg

1 tablespoon tupelo honey

1 teaspoon vanilla extract

1 cup spiced pecans, chopped


Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.

Combine the flour, baking soda, and salt in a medium bowl. Place the butter and both sugars in a medium mixing bowl, beating at medium speed with an electric mixer until well blended. Add the egg, honey, and vanilla and beat until thoroughly combined. Stir in the flour mixture and the spiced pecans until well blended.

Drop the dough, in batches, by rounded teaspoons onto the prepared baking sheet. Bake for 8 to 10 minutes, until golden brown. Let the cookies cool on a wire rack and enjoy.
