Stuffed Flank Steak

1 flank steak (1 to 1-1/4 lbs)

1 Tbls. enriched flour

2 Tbls. prepared mustard

1 tsp. salt

1-1/2 cups bread crumbs

1/3 cup chopped celery

1/4 cup bacon drippings or salad oil

1/2 to 1 tsp. poultry seasoning

1/4 tsp.salt

 

Score steak on both sides and dredge with flour. Spread mustard on one side of steak and sprinkle with 1 tsp. salt. Combine remaining ingredients and spread evenly over steak. Roll up steak like a jelly roll, then secure with skewers or toothpicks and lace it with kitchen string. Heat a little oil in a dutch oven and brown meat on all sides. Add 1 cup of water, then cover dish and bake in a 350-degree oven for two hours or until tender. Makes 4-6 servings.
