It seemed to happen suddenly, I turned 50 and then the pounds appeared. It didn't feel like I had changed anything but my age although that “once a month friend,” or should I say foe, was no longer in my life. At 65 I have climbed the scale to the top and down again experimenting daily with what will satisfy, satiate that gnawing desire which not necessarily came from hunger.

And then one day I discovered what would become my staple, the food that I am never without and thankfully is as versatile as my appetite. So drum roll please as I present to you the food that has saved me...spaghetti squash.

Hold on now, hear me out. Do you like Italian? Smother it in tomato sauce. Is mac and cheese hard to resist? Get some fat-free cheddar and a little fat-free cream cheese and you will barely miss the real thing. How about some soup? Just load it up with spaghetti squash and you've got a hearty meal. Shall we even talk about buttered noodles mixed with some parm? Heat up that squash with butter or spread with a few sprinkles of Parmesan and l promise you won't look back.
